Today we racked our first Dragon’s Blood Mead into it’s Secondary Fermentation.
This was started 2 weeks ago during a Haus Adelbrecht A&S Sunday session.
The mix began with a Tea of Hibiscus, Hops, and Fresh Ginger. This steeped for 24 hours before the Must was started. There were 5 LBS of Honey in the batch.
At the start we had an O.G. of 1.090, at Racking we had .992, this gives us 12.86% ABV.
I am amazed with the flavor, as dry as this is, and I don’t usually like dry mead or wine, it is delicious right now. I will be back-sweetening this, but I don’t think I will be making this as sweet as my Suß Met and that will be unusual for me.
