Recently I decided to create my second cider, my previous cider was good, but it came out too sweet. It was also a still cider, and I wanted something that would have a little sparkle as well.
I’ve recently enjoyed Virtue Cider Michigan Cherry Cider and it got me to thinking about creating something similar. Thus came the conception of the Kirsche Apfelwein (Cherry Apple Cider).
I’m pleased to say that this one turned out much better than it’s predecessor, dry but not unpleasantly so. And anyone who knows me knows I’m not a fan of dry.
I’m already thinking about recreating this, maybe twice as large a batch, if not 250% increase in output on the next batch.
